250 g elbow macaroni (about 2 cups)

2 tablespoons butter

2 tablespoons flour

2 cups milk (whole or low-fat)

1 ½ cups grated cheddar cheese (or a mix of cheddar + mozzarella)

½ teaspoon salt

¼ teaspoon black pepper

½ teaspoon mustard powder (optional)

½ cup breadcrumbs (optional topping)

  1. Cook the pasta: Boil macaroni in salted water until just tender. Drain and set aside.
  2. Make the sauce: In a saucepan, melt butter over medium heat. Whisk in flour to form a paste and cook for 1 minute.
  3. Add milk: Slowly pour in milk while whisking to avoid lumps. Cook until the sauce thickens.
