🍴 Ingredients
2 chicken breasts or thighs (boneless)
1 tablespoon olive oil or butter
1 onion, chopped
2 cloves garlic, minced
2 carrots, sliced
1 celery stalk, chopped (optional)
1 cup noodles (egg noodles or spaghetti broken into pieces)
4 cups chicken broth or water
1 teaspoon mixed herbs (parsley, thyme, or rosemary)
Salt & pepper to taste
Lemon wedge for serving (optional)
🔥 Instructions
- Cook chicken: In a pot, heat oil and cook chicken on both sides until lightly golden. Remove and set aside.
- Sauté: In the same pot, add onion and garlic. Sauté until fragrant.
- Add vegetables: Add carrots and celery, stir for 3–4 minutes.
- Simmer: Pour in chicken broth and return chicken to the pot. Add herbs, salt, and pepper.
- Cook noodles: Once the soup begins to simmer, add noodles and cook until tender.
- Shred & serve: Remove chicken, shred it, and return to the soup.
- Serve warm with a slice of bread and a heart full of gratitude.
