This vegetable curry is full of color, warmth, and simplicity — proof that even the humblest ingredients can become something special when seasoned with love and gratitude.


🍴 Ingredients

2 tablespoons oil (olive or vegetable)

1 onion, chopped

2 cloves garlic, minced

1 teaspoon curry powder

½ teaspoon turmeric (optional, for color)

2 cups mixed vegetables (carrots, peas, potatoes, green beans, or any available)

1 tomato, chopped (or 2 tablespoons tomato paste)

1 cup coconut milk or cream

½ cup water (adjust for consistency)

Salt and pepper to taste

Fresh coriander or parsley for garnish


🔥 Instructions

  1. Sauté aromatics: Heat oil in a pot. Add onion and cook until soft and golden. Stir in garlic, curry powder, and turmeric.
  2. Add vegetables: Add your chopped vegetables and cook for 3–5 minutes, stirring often.
  3. Add tomato & liquids: Stir in tomato, coconut milk, and water. Mix well.
  4. Simmer: Reduce heat, cover, and cook for 15–20 minutes until vegetables are tender and flavors are blended.
  5. Season & serve: Add salt and pepper to taste. Serve hot with rice, chapati, or bread. 🌿
