1 cup dried lentils (rinsed)
1 tablespoon olive oil
1 onion, finely chopped
2 cloves garlic, minced
2 carrots, diced
2 potatoes, diced
1 tomato, chopped (or 1 tablespoon tomato paste)
4 cups vegetable or chicken broth
1 teaspoon cumin (optional)
Salt and pepper to taste
